The hours when a grid works hardest, usually late afternoon and early evening as air conditioning, cooking and lighting stack together, and in summer heat above all. Peak hours set the price and the stress: operators must hold extra generating capacity, including costly peaking units, that may run only a few hundred hours a year, which is why so much of grid economics is really about the peak rather than the average.
